Ideas for a birthday treat for a class?

We are adults and ⅓ of the class does not eat sugar. One of my favorite classmates has a birthday tomorrow and I want to bring an easy-to-eat treat to celebrate.

I want something low-sucrose, fun, easy to make, cheap ingredients. I know my creative foodie jellies will come through with something awesome.
