What are some good eggplant recipes?

I recently acquired 1 eggplant at a grocery store. I have never eaten eggplant before, and I wanted to try something new.

I have no clue what to do with an eggplant.

I’ve seen a few eggplant recipes on the internet, but I want a second opinion on which recipes taste better than others. I’m sure someone on here has eggplant experience.

Several of the recipes seem to involve Parmesan cheese, but personally I do not like that kind of cheese, so I’m looking for something else.
