Places where you have to pick a number and wait to be called?

I think I’ve been watching too much Seinfeld. I’ve never been inside a bakery before, do they really pick numbers and wait to be called? Why is that? The only other place I know of where you do that is the DMV and that I understand doing because there are a lot of people.
