Suggestions for good casseroles to make ahead and bake later?

I’m a life-long vegetarian, but my meat-eating friends just had a baby, and I’d like to make them a few dinners that they can just stick in the oven when they want them (or put in the freezer for later). I’m perfectly happy to cook meaty things – I just don’t know what to make. Any thoughts?
