Ideas on what to do around Denver?

My hubby may have a 2 week trip in January in Denver for work. We are thinking maybe to bring our soon to be 3 year old. Where is a good place to play in snow? and touristy things to do in Denver or nearby.

Any good recommendations for restaurants? (we can always do takeout if not kid friendly)
