What is the best way to change the water in my hookah?

I have a glass hookah with one hose. The hose and downstem are fitted in very tightly with rubber. The last time I took it apart for cleaning, I came very close to breaking it. I am afraid to try removing either part, but I can’t empty all the water without doing so.
