MS Excel Help: Calculate Amount of Time?

Does anyone know how to calculate the amount of minutes and seconds between different times in Excel?
For exampl, I want to take a time stamp in this format: 2009–12-09 17:26:34
and then find the elapsed minutes and seconds to the next timestamp: 2009–12-09 17:56:31
What formula do I use? Thanks.
