If you were a Health Inspector, would you give this restaurant another chance?

You are an health inspector at a small restaurant and you happen to be enjoying one of the best meals served to you when suddenly, one of the busboys started crying in tears towards you and the manager that his/her chewed gum piece accidently fell in the food. You were obviously disgusted to hear the incident and stormed out of the restaurant. What would you do: give the restaurant a second chance and fire the busboy? Give the restaurant and the busboy a second chance? Or something else?
