What kind of pudding should I use for my bread pudding experiment?

OK,This morning I saw this recipe for bread pudding on TV that just set me back. The guy used banana bread for the bread, and some sort of uppity (I’m sure) vanilla pudding. He fanned the slices around in a circular baking dish, and just poured the pudding on top. After it bakes it looks really cool. You can see the feathering in the dish. I can only imagine the taste as heavenly!
I make a kickin’ banana bread so I’m going to try this tomorrow. HOWEVER, I wonder if pudding other than vanilla might be even better….like lemon? Tapioca? What do you guys think?
