What is your best recipe for a nutritious muffin?

It is an icy cold Alberta week, peefect for coffee and homemade muffs. Do you have any recipes or tips for best bran, oatmeal or any “cereal killer muffins?” P.S. spice is nice.

We’re mostly gluten free here @smilingheart1…meaning were now mostly muffin free.

However, I do make some “paleo” muffins frequently for my family to enjoy. This recipe is gluten free, and can be dairy free. We use only organic ingredients in ours. Here’s our go to muffin recipe for days like today:

Coconut Pumpkin Muffins

½ Cup Coconut Flour
½ Cup Pumpkin Puree
½ Cup Melted Butter or Coconut oil
6 Eggs less can be used, if desired. If so, then add in more pumpkin.
¼ Cup Maple Syrup (can be substitued w/honey if preferred)
½ tsp Baking Powder
Pinch of sea salt
1 tsp each: Cinnamon, Nutmeg personally, we like spice so I add ground cloves & ginger, too…I’m more liberal with all of them (I don’t measure)
¼ Cup of your fav mix in. See below

Beat Eggs. Mix in Wet ingredients. Mix in dry ingredients by hand, then divide into 12 (brown wax paper) muffin cups and bake at 400 for 15–18mins.

*Mix ins: Dried Fruit, nuts, chocolate chips, etc. I mix in and I sprinkle on the tops prior to baking. If desired mix up a bit of cinnamon sugar to sprinkle on the tops. We use Enjoy Life mini chips..Yum!

When baking muffins, I only use If You Care liners, as I’ve found no other way (silicone cups, etc) to allow you to eat the muffin w/out losing part of it to the liner. The muffins pop right out of these.
