What are some creative uses for lemon grass?

I have TONS of recipes for Asian chicken or shellfish, so I don’t need any more of those. I have made a really good hot tea with it already, but I can’t live off tea and Asian chicken.

I have a huge plant in the backyard. While the other plants didn’t do so well in the drought, the lemon grass thrived and is a giant monster. I need stuff to do with it! Creative cooks, hear my plea!
