Are potatoes that have sprouted still ok to eat?

You buy a bag of potatoes cause you want potatoes with dinner. But oftentimes you end with four or five or six potatoes still in the plastic bag. We put the bag in a hanging basket thing and they sit there unloved and unused for a while and then you go and want to cook them and they have sprouted, maybe with little flowers, and your wife says throw them away, once they have sprouted, they’re no good.
