Has anyone tried (or is planning to try) some new springtime recipes this year?

My mom always gets these recipe supplements in the mail, because we subscribe to several magazines like Cooking Light, Sunset and the like. About a month ago we got one called Kraft Food and Family which featured This Recipe for a “mac and cheese” made with cauliflower instead of noodles.

I couldn’t wait to try it. Of course, I had to doctor it up, as I tend to do. I’ve made it twice so far. The second time I made it, I added broccoli, sautéed shiitake mushrooms, and Field Roast fake sausage, then I sprinkled chipotle pepper powder over the panko bread crumbs on top. OMG! This stuff was da bomb! I plan to make it again and freeze some. I’ll probably change up the add ins too, because this recipe is very versatile. I’m thinking sun dried tomatoes might be good, or maybe chopped green chilies.

Have you made anything, or have any recipes saved, on Pinterest or elsewhere, that you are planning to try in the near future?
