Have you ever thought something was true, for years and years, only to find out it isn't true after all? And were you glad, or sad?
Bean wars, part II: “I fart in your general direction.”
For years I thought the texture of the beans in canned refried beans would be screwed up if I froze the cans. I assumed that held true for all cooked beans.
I eat a lot of refried beans, but my husband doesn’t, and it was frustrating because I was throwing out a half of can, or more, of beans 2 or 3 times a month.
Yesterday I learned that that is not true and I’m just so THRILLED!
I make homemade pinto beans to pour on corn bread. I simmer the beans down 2 or 3 times, with onion and bacon that has a lot of fat on it. It is so, so good. It was one of the few dishes that every kid agreed on.
I’d make a huge pot full, and we’d eat it for 3 days, in different ways, in burritos, tostados, in a lot of ways.
After the kids moved out I was a bit disheartened, and a bit challenged, about how to cook corn bread and beans for just two people. I was sad that I couldn’t make as much as I used to, and just freeze a bunch of it….
Yesterday…I FOUND OUT I CAN!!
This is a game changer for me! I mean, good-bye canned refried beans!! See ya later alligator!
