Why does microwaving Polish sausages make them spicy?

As compared to boiling them in hot water?

My guess is that the microwave energy goes directly to the spices and heats them more keenly than boiling would, because that is indirect.

But when I make polish sausage or bratwurst, I broil them – for the crispy outside. I wouldn’t think of boiling.

I’m thinking that boiling them in water makes them more bland.

I know brats are often boiling in beer. It definitely changes the character…

Hey RDG. Try adding some spices that you like in water you boil them in. WARNING! DO NOT boil uncooked peppers, unless the sausage is almost done. Boiling certain peppers literally produces mace-like steam. It can burn your eyes, nose, and lungs….
BOIL SPICES IN WELL VENTILATED AREAS ONLY.

My guess would be that the spices that are in the sausage are brought to life with the heating of the oil in the meat. As the oil heats it picks up the oils/flavors of the sausage including the spice and it spreads it throughout the sausage. The same happens when you fry or bake them. When you boil the sausage, some of this oil is being washed away along with some of the flavor.

@MrGrimm888 Good warning about the peppers. I had a friend that tried drying some habaneros in a dehydrator. He and his family had to flee the house when the oils began to get airborne.

^OH yeah!
We were making jalapeƱo boiled peanuts, using raw peppers. It snuck up on us. By the time we realized our obvious mistake, we were choking and everyone’s eyes were pink and swollen. At least nine of us were slightly hurt, including a child.
We all had a mace party in the front yard. We laughed about it, and made fun of each other’s suffering. A few guys couldn’t really see, their eyes were so swollen.
A very committed friend kept cooking and tending to them in intervals. He made like three huge pots. They were delicious. The women, were not pleased with the men folk. They had to pee outside all night, and wanted the kids to be able to go to bed. The kids loved it though.
It was a great experience. We just never did it indoors again…
