Do you have a birthday present suggestions for a girl I've been dating for about 7 months?

We’ve been dating for a while now, and we like each other very much. I’ve already signed us up for a paella cooking class this Saturday, which involves sitting down with the head chef of a local Spanish restaurant drinking wine and having him teach a small group of people how he cooks his paella. I think it’s going to be a great date, but I know how much women like to open things, so I was hoping you guys could come up with some clever suggestions.

About my girlfriend: she’s smart, practical, Italian, feisty, owns and takes care of several horses, isn’t really into “girly” things, but she can dress up when appropriate. She’s a student finishing up her BS and plans on going into Nursing school. I’ve considered jewelry, but that can be awkward early in a relationship (you don’t want to buy “cheap” jewelry, but you can’t spend too much or it’s weird). I’m 30 and she’s turning 28.
