What is happening with my cinnamon?

I have noticed that sometimes when I cook cinnamon in water and sugar it goes very sludgey around boiling point and other times it doesn’t. I have been using different sources of cinnamon, but I swear sometimes it sludges and sometimes it doesn’t. Does anyone know what cinnamon is doing what?
