Taking my iPod Touch to be repaired; how do I secure it before handing it over?

I have a friend of a friend who can fix my headphone jack. Just to be on the safe side, I want to make it so that she can’t access my mails, Facebook, etc.

Is there an easy way to secure everything (like a setting), or do I have to go through and delete the info and/or apps one by one?
