What do we NOT see on Chopped?

Chopped, the Food Network cooking competition, puts competitor Chef together to make good meals with odd ingredients. Everyone knows that but what happens on the set that doesn’t show up on TV?

They make it seem like the open there basket and immediately start cooking yet there are quick mid session interviews and such. Also, they are always finishing up within seconds, every time!

I understand it’s a TV show and needs to be edited to be entertaining but I am just curious what really happens. I think they get more time then we are led to believe.
