How would you describe the taste of steak cooked medium rare?

A friend of mine asked today how my medium rare steak tastes like and why do I find it delicious compared to a well done steak. I told her a well done steak tastes like cardboard to me. However I got tongue tied in describing why the medium rare tastes delicious.

I think all I said was the blood in it makes it more tasty. Lol. Could you describe it better than me please…assuming you too find that it tastes much better if cooked medium rare. Thanks.
