Will an "outdated" round thermostat work with a new air conditioner?

I think not but here’s the problem: we had to buy a new central air unit but it came with square, digital thermostats that are impossible to figure out. What I want is the old fashioned? ROUND thermostats where you simply turn them left or right. The new square digital ones have signs and symbols like they’re from Egypt or another galaxy. How can I avoid the square ones and get round ones?
