Do you have a great office potluck recipe?

The End of the World Potluck is coming up! While I have some great dishes in mind (Nuclear Wasteland Stuffed Mushroom Clouds, Mayan Calendar Cupcakes), I’d like to bring a real food dish. Something filling.

We have a lot of special diets in our office – one girl allergic to anything spicy, about half of us are vegetarian or vegan. I have a big crock-pot and a food steamer I can bring in, and there’s a microwave and a toaster oven in the office.

So do you have a kickass recipe (preferably meatless) that’s always a hit at parties, and doesn’t require an oven? Hit me!
