Why doesn't human fat melt?

Every year you see heavy people baking in the sun at beaches. So why doesn’t the sun melt fat?
If you left a tub of fat in the heat but under shade, you will find it all melted when you open it up.
So why doesn’t our body fat melt? We lose water but not fat. Our skin can burn and dry up, but fat remains. So why won’t fat melt?
