[D&D RWBY] Which Grimm is too grim?

A friend of mine has recently gotten into RWBY along with the rest of our friend group and suggested we try a d&d campaign in the world so I happily obliged. The problem is, I suck at creating anything regardless of how much I care for the subject in question.

I’ve made a list of different creatures to work on making Grimm (i.e. Griffon, Beowolf, Razorback, etc.) but I’m not running a campaign accurate to canon, I’d like some outside opinions on what is going too far, albeit creating a certain type of Grimm, or a story aspect that shouldn’t be allowed.

I would like to add some Grimm that are smarter, more magical if you will, but am unsure how to make that work since they’re basically just creatures hellbent on the destruction of man, though they are capable of learning tactics and such.
