What would you do with this empty space?

We are doing some remodeling around a 50” flatscreen that we got for Rick for Christmas. We will end up with a pretty fair amount of empty space in the wall that once housed a cabinet. Rick pulled the cabinet out and he’s just going to sheet rock it all up.
I really want to be able to do something with it, like turn it into a hidey hole for the kids. The thought of all that space just going to waste is making me bit crazy.
We can’t make a cabinet on the other side because the fridge is right there.
Rick said No, to the hidey hole, but he’s considering getting a plastic skeleton and sticking it in the wall before we close it off. smh
With this evidence Rick announced that we built the wall in 2008. It’s an old hoagie sandwich wrapper and he read the expiration date.
