Could you help me modify my dinner recipe?

Tonight, I was planning on making this http://vimeo.com/4253809 for myself and a few friends… until I found out a few minutes ago that one of them HATES onions. And lucky for me, onions are a huge ingredient to the meal. I’m terrible at making up recipes on the fly, so hopefully someone out there in the Flutherverse is able to help me. I was thinking of replacing the onions with white rice, but don’t know how to go about measurements and all of that fun stuff. Please help! Oh, and thank you so, so much!
