How do those expensive cake decorators keep flys, gnats and other bugs out of the frosting when they bring the cake outside?

If you’ve ever watched those cake decorating shows on cable, they always bring the cake to the delivery van uncovered in any way. On one show, gnats were clearly flying around the uncovered, frosted cake. Don’t they get into the frosting? If not, how do they keep them out?
