What is the safest and most environmentally friendly way of disposing of vegetable oil?

Having just fried some falafel for dinner, I find myself with quite a bit of used vegetable oil. Down the drain seems a bad idea, and composting, while appropriate (I think), is difficult given that this is pure oil. Any suggestions?
