How do you show off your chops?

I’m a guitarist, but i like to focus more on theory and improvisation. When I tell people I play, or they see my guitar, they always have song suggestions or ask me to play something they’d know. This kind of annoys me, but I was just wondering how you’d entertain them? Where do you get your tabs? Do you just figure out the parts? What types of songs are best for showing off mad skills?
