Best way to compliment a woman on her hair?

A woman comes into my store regularly that I find very attractive. Normally I never get a chance to talk with her. Yesterday she came to my kiosk (coffee) and of course I was practically tongue-tied. I would like to be able to compliment her on her hair, which is gorgeous (to me; – the only way to describe it is it reminds me of a Lions’ mane). What is an appropriate thing to say that does not sound stupid or like I’m trying to hit on her? (would love to, but..) btw, we are both mature individuals….
