Which of the Disney World parks would you leave out?

As you may find by looking at some of my other posts, my g/f and I are going to Orlando in May. As far as Disney is concerned, our original plan was to visit 3 of the parks (Animal Kingdom, Magic Kingdom, and Epcot.. leaving out Hollywood Studios). We’re considering the idea of skipping one of the remaining 3 parks, but aren’t sure which we’d rather drop. I’ve been to Disneyworld a few times before, but the last one was almost a decade ago now. As such I’ve visited the Magic Kingdom, Epcot, and Hollywood Studios (or MGM as it was called at the time), but it’s been a long time. Also I’ve never been to the Animal Kingdom. Any comparisons or contrasts, personal opinions, experiences, what have you, would be appreciated.

Things to keep in mind:
-IF we end up still going to all 3 parks, we’ll be spending a whole day at one, and splitting a day between the other two.
-Seaworld Orlando is high on our to-do list, but we’re debating the idea of picking between Seaworld and the Animal Kingdom, as there would be a fair amount of overlap in “attractions”, and my g/f is far more interested in the aquatic end (whereas I’m spoiled by living in a city with one of the best Zoo’s in the world).
-We live near Cedar Point, so NONE of these parks will come close on the thrill aspect as far as rides go.
