How can I use the function keys on my MacBook to control itunes?

I have it set so that the functions printed on the keys only work when you hold fn+FX. F9-F11 are taken up by expose, and F12 is dashboard. How can I make F1–8 control what is playing in itunes (pause/play, skip, previous, etc)? I downloaded Menuet, but it is only a free trial and I couldnt figure out how to assign functions to the F keys. This has been frustrating me forever.
