Why do you think that in the 5 star restaurants, they have mostly all waiters instead of waitresses?

Almost every 5 star restaurant where I have gone, have male waiters, assistant waiters, water fillers, coffee toppers, etc. In fact there are usually more of them than patrons. Why no waitresses?
