Whenever I eat certain foods, my head and throat feel funny. What's happening here?

Like today I was getting something in the bulk section at the grocery store, and I knew I shouldn’t get the dried pineapple rings because this happens in full force with those. I got dried apple pieces because I didn’t think it would happen, but it did! I feel….strange now. I really don’t know how to describe it best. Kind of like a mild sore throat and kind of light headed…..but that’s not it. I know this really doesn’t give you much to go on, but I can’t think of any better way to say it. My mom thinks I’m making up ways to get out of eating foods I don’t like, but I really do like it. And it’s not just dried foods. It’ll happen with spinach and swiss chard (kind of like spinach), and I know it’ll happen with other things but I can’t exactly remember what. When I see certain foods that I’ve never had before, I can pretty reliably tell if it’s going to make it happen. So does anybody recognize this as something they’ve had experience with?
