Do you ever make meatloaf?

Asked by josie (30934points) November 6th, 2019

Some people talk about their mom’s meatloaf
Do you carry on the tradition?
Did you modify the recipe?

I did that once.
My mom’s meatcake (that is what we named it) was an assault on the senses
No. hell, no.
My mother had a smaller version of the meatcake that my brother named “Wolfburgers”
That was also unpleasant.

I have but have no recipe that I follow.

My husband does our meatloaves. He loves to experiment with my spice collection. I cut the onion, because it hurts his eyes. His hands are stronger for kneading the meat. We usually start with 3 lbs of lean ground beef. He adds some oatmeal, minced garlic, onions, grated carrots, grated potatoes, minced celery and herbs and spices.

I make a ground turkey breast meatloaf. It includes celery and onion, and brown rice and crushed saltine cracker, and ketchup on top.i glaze it with honey.

Yep; it’s a fave around here. I make it pretty much like my mom did. She crushed saltines for filler but I use dry oats.

Never seen, tasted or smelled one my entire life & I must say, that’s fine by me, it sounds gross.

@ucme: it’s very similar to the taste and consistency of meatballs. Hamburger meat, eggs, and some kind of breadcrumbs, plus some spices. Some people add other things like onions or put bacon on top, and may serve it with ketchup or gravy. It’s kind of a cold weather comfort food.

@jca2 I will eat a scotch egg which is a boiled egg wrapped in sausage meat covered in breadcrumbs, similar in ways, but is eaten cold, sometimes with a salad.

My meatloaves are very much like @zenvelo‘s with ground turkey, veg, rice, whatever the hell is in the fridge, lentils if I have some cooked and other traditional ingredients (eggs, breadcrumbs, etc) More of a “cheatloaf” actually. I loves me a meatloaf sandwich!

Not during the summer. For me, meatloaf is a winter food. Turkey-based, with a ton of veggies mixed in.

Funny enough, I didn’t start making meatloaf as an adult until about ten years ago (age 40-ish). I basically used my mom’s recipe, which is the recipe on the Lipton’s beefy onion packet. My mom also adds some chopped onion, so I did too. It was the first meatloaf my husband ever ate. He told me it was a little too sweet, so I cut the ketchup in half now. I also usually don’t bother with adding any egg, or only add some egg white. We both really enjoy my meatloaf. He requests it. I don’t know why it took me 15 years of marriage to start making it for him.

I cooked this a few years ago and it was fantastic! Just like a burger with extra ingredients.

Meat Loaf Recipe
Ingredients:
1.5 lbs ground beef
1 egg
1 onion
1 cup of milk
1 cup dried bread crumbs ( or just cut up 4 or 5 slices of toasted
bread in a blender to make)
Salt and Pepper to taste
2 Tbsp brown sugar
1 tbsp prepared mustard ( Dijon mustard the best)
½ cup ketchup
—————
Set oven to 350 degrees ( 175c)
Combine : Beef,egg,onion,milk,bread,add salt & pepper.
Form: form into a loaf in a lightly greased pan.
Then prepare the sauce topping:

Sauce for the topping:
Brown sugar , mustard ( Dijon mustard) & ketchup .
Mix well and pour over the top of the meatloaf “Before” you cook the meatloaf.
—-
cook for one hour & let cool
Enjoy

Can’t say that I’ve ever actually made meat loaf.

Though I have attempted to make meatloaf once.

Inspired_2write's avatar

@raum
Its just like a huge hamburger of which you slice like a loaf of bread onto a plate or bun.

I think maybe my breadcrumb ratio was way off? It was way more crumbly than it should have been. :/

I make it often in the fall and winter. In fact, I’m making it tonight. My meatloaf is much better than my mother’s. I made a few tweaks to a recipe I found online several years ago.

When I met my wife, she always bragged about how great her mom’s meatloaf was. I made mine and it instantly became her favorite! And no, it isn’t mom’s recipe…I am a good cook all on my own.

Dutchess_lll's avatar

I used to. I guess it was good. None of the complained.

Dutchess_lll's avatar

My mom didn’t make meat loaf. She fried every thing!
