How do you prepare and eat kale?

I bought a large bunch of it for $2.00. Without any research to influence me I’ve been trying different preparation and cooking methods. In all cases, I cut off the stems and eat the leaves. I did try eating the stem raw once but it was not very good.
I roasted some in a frying pan with a little olive oil That was good but, the leaves disappeared.
I poured water and oil in a frying pan and cooked it. The leaves turned bright green and were tender. I liked the texture but not the taste.
Today, I cooked some in the frying pan with water, olive oil, and a sprinkle of Zatarain’s Creole seasoning. I used the kale and some cheese as a filling in a 3 egg omelet (prepared with only one yoke.)
It was delicious!
How do you eat kale, raw or cooked? Do you eat the stems? Do you have any other serving suggestions?.
