How to make a lasagne without a tomato sauce?

I can’t eat tomatoes as I’m allergic to them but want to make vege lasagne, what else can I make the sauce from?

Some kind of white sauce, like Alfredo or Béchamel.

My SIL makes lasagna without tomato sauce. It’s a northern Italian recipe, I wish I had it, the Northern Italians are not tomato sauce people in general, the southern ones are. Maybe you can google northern italian lasagna? It was cheesier and stronger than a bechamel, though that would work I think, and it had mushrooms in it also. It was not like an American veggie lasagna, the cheese was more like regular cheese, not a soft one like ricotta.

Make a vegie broth on the stove from any and all vegies you like then strain the broth and put the chunks in a processor or blender to puree into a vegie paste. Add enough broth to the paste to get back a sauce consistency you want to layer with. If you like the look of a little redness then make sure lots of cooked carrots and some red wine go into your mix. For a different taste, you can also pan sear your vegies before cooking them soft in the broth.

You could also do pesto.

Pesto would be great – you could mix pesto with alfredo for a basil alfredo. Yum!!!

I don’t know the answer, but could one make a tomato sauce but substitute roasted bell peppers for the tomatoes, and go that route?

I need to get my husband to ask for it. I asked once and she never gave it to me. Most likely because her typing skills are lacking, and with her you never know, she might just not be in the mood. He needs to get it from her over the phone. It is actually her x-MIL’s recipe, who lives about 45 minutes outside of Venice.

Porcini mushrooms, cremini mushrooms and a béchamel sauce.

For something a little different you can use ricotta, Parmesan, mushrooms and artichokes as filling. The taste of the artichokes is strong enough to be able to use broth or wine in place of a heavy sauce.
