What is a good side dish to take to a potluck dinner, when you have no idea what the main course, which I assume will be provided, is?

I have a potluck dinner to attend tomorrow. There is no mention of what the main course will be. I don’t know if it will be some sort of turkey or ham, kind of in keeping with the time of the year, or some sort of barbecue or fried chicken or something. I sent an email asking what it was, got no response, and no one else seems to know either.

What is a good catch-all side dish I could take?

A tossed spinach salad with pecans,, tomatoes, feta, mandarin slices, with a balsamic vinaigrette and olive oil dressing. Goes with anything, and even vegetarians (but not vegans) will be happy.

Potato salad with chopped onions, radishes and hard boiled egg.
Or if it is close enough to carry hot, Baked Mac and Cheese.

I assume you’re not referring to Kraft in a box. I need a grown up recipie for Mac and Cheese.

I’m trying to figure out which ingredient a vegan would object to in that salad @zenvelo?

Grown up uses Cream Cheese, cheddar and Swiss. Figure on pound of dry mac will make 8 servings (8 ounces of each cheese after a little milk and butter are added).

Feta cheese in @zenvelo ‘s salad, no dairy.

Cheddar doesn’t really melt very well, does it?

Cheddar melts but the Swiss and Cream Cheese really melt!

Your famous baked beans. I took baked beans to my first Xmas party potluck of the year and everybody loved them. We also made a salad that had pretty Xmas colors with butter lettuce, avocado, red grapefruit sections, pomegranate seeds, feta, and sliced almonds.

The next party is on Saturday, our big family potluck. I’m bringing baked beans again, because they pretty much go with everything (and I am able to make a vegetarian version, so I know I can eat them) and also making some peanut butter rice crispy treats (also vegetarian, because it doesn’t contain marshmallows).

One of my cousins made some really good pinwheel sandwiches last year. Basically cream cheese and a few extras (whatever you like) including pimientos and parsley and some of them had chopped jalapenos. You could also use chopped celery, or even corn. Just mix your favorite things into the cream cheese and then spread that onto either flour tortillas or lavash bread, then roll it up, and cut it into slices. These went over very big at our party.

If you have a crock pot, some type of soup would be good. Maybe navy bean, butternut squash bisque, or potato cheese.

@Dutchess_III Regarding @zenvelo‘s recipe it is the Feta Cheese that vegans won’t eat. Vegans do not eat any dairy based cheese (there are vegan nut based cheeses, but that info is for another Q).

You can make this grownup Macaroni and Cheese which is OK for the vegetarians, but not the vegans.

Update. Turns out the main course was meatballs, so baked beans would have been perfect, had I known. But I didn’t make baked beans. I was really tempted to make the salad @zenvelo, suggested, but was kind of glad I didn’t. There were no less than 4 other green salads there. What I finally settled on was a salmon dip. It was unique and it went over very well. But we had plenty left over, too.
Man, there was a lot of food!

A baked vegetable salad.

Dig through your grocery store’s highly varied bulbous vegies and squashes. Cube them, and add sliced red onions. Shake them in oil and a little teriyaki sauce, salt & pepper them a bit, and bake them.

No beets. Not even white beets. People react strongly to beets.
