Do you have any easy vegetarian recipes to share?

Recently I’ve gotten more into healthy eating. People always talk about their cravings for cookies and hamburgers and stuff like that, but fresh fruits and veggies, whole grains and legumes are delicious.

What are your favorites? Especially stuff that’s easy to make. Do you have any favorite ingredients?

Get baby squash, cut in half (or slice if they’re a little bigger – you want pieces about ½ inch thick), brush with olive oil mixed with just a pinch of garlic salt, and grill for a few minutes until just barely cooked.

I love ratatouille tart. Which is exactly as it sounds. Make regular ratatouille then put a store bought frozen pie pastry on top and bake. It is delicious. Turns the side dish into a meal.

The magic and delicous black and white bean salad. It can be expanded, shrunk, used for several days in a row, and fiddled with.

Black and White Bean Salad (Yield: 8–10 servings)

2 cans drained black beans (you can be pure and start with dried beans)
2 cans drained small white beans ( ditto)
1 can drained corn (or cook fresh corn and scrape, scrape, scrape)
1 C chopped red onion
1 C chopped red pepper
¼ C chopped cilantro (vital)

2 C. Cumin Vinaigrette (I use 1½) Use whisk for all mixing. Add EVOO last.

¼ C cider vinegar and ¼ C fresh lime juice
1 T dijon mustard
1 t freshly minced garic
1½ C EVOO
Salt and pepper to taste. (Kosher and ground).

Can’t beat a traditional Greek Salad for me. With hummous and pitta bread on the side.
