What are some good eggplant recipes?

I recently acquired 1 eggplant at a grocery store. I have never eaten eggplant before, and I wanted to try something new.

I have no clue what to do with an eggplant.

I’ve seen a few eggplant recipes on the internet, but I want a second opinion on which recipes taste better than others. I’m sure someone on here has eggplant experience.

Several of the recipes seem to involve Parmesan cheese, but personally I do not like that kind of cheese, so I’m looking for something else.

You say you don’t like parmesan cheese, but if you’ve never had it this way you should really try it. Eggplant parmesan is a great dish and not hard to make. Many recipes online, including this one.

Try some baba ganoush. with some fresh bread or pita.

I actually prefer it without tahini, but you can go either way with that.

Eggplant is one of those things that you either love or hate. There’s no middle ground. I’m a vegetarian and I abhor eggplant.

That being said, I’ve found 2 eggplant dishes that are actually pretty good. Like @Seek_Kolinahr said, Baba Ganoush, because the taste and texture are so far removed from eggplant.

That’s the problem with eggplant, mostly the icky texture. When it’s grilled, or roasted which are pretty common methods of cooking eggplant, it has the texture of wet corrugated cardboard. Sort of mushy and sort of mealy at the same time. So I don’t advise fixing it that way.

The second way that I can actually tolerate eggplant is in Indian Bharta

If you are experimenting with vegetarianism or just trying out new veggies, eggplant is not your best option.

I like eggplant, and I have to agree with @Kardamom is not a good practice vegetable.

When I was a kid, my mom just cut it into rounds about ½” thick, breaded them in cornmeal (today, I’d use a good fish-breading mix), and fried them until they were crisp. We liked it a lot.

I’d encourage you to try @Pachy‘s recipe. I don’t know what it is about Parmesan that you don’t care for, but another hard, dry cheese such as Asiago could easily stand in it’s place.

Ratatouille is a very nice vegetable stew. However, I too am not a fan of eggplant and usually pick it out, leaving the delicious sauéed onions, garlic, peppers, tomatoes, zucchini, and yellow squash.

Ratatouille’s delicious. If you search the internet, you can find some recipes without Parmesan cheese.

I recommend finding a stovetop recipe rather than something baked in the oven. When the vegetables get sautéed, they soften and their flavors meld. If I try to make ratatouille in the oven, however, I end up with hard, bland ingredients.

^^ The recipe I linked to above is done on the stovetop. I’ve never actually tried baking a ratatouille.

I also recommend Ratatouille, you could also serve it with spaghetti noodles to make it go further but quite delicious without.
