I need a baked chicken recipe - really simple, right now!

I have limited ingredients (greek yogurt, variety of dressings, dried Italian seasoning packets, jarred tomato soup, canned tomatoes, marinated mushrooms, onion, garlic, kale, some other things…). I also have chicken that has been in the fridge and needs to get cooked. I kinda just want to throw it in the oven and forget about it for a half hour – so something simple!

Whole chicken or cut up?

Italian dressing, salt and pepper, and the mushrooms. Bake it at 375 for 45 minutes.

Put everything in a nice deep corning ware exept for the (greek yogurt, variety of dressings) add a little wine and you’re good to go :)

Greek chicken, easy and tasty:
Rinse and pat dry chicken, place in pan, sprinkle with granulated garlic, salt, pepper, generously sprinkle with oregano, squeeze ½ lemon over chicken then drizzle with extra virgin olive oil.
Bake at 350 for 1 hour, best served with white rice and salad.

K so! This is what I did and it’s so good! Chicken, s+p, topped with a little butter (doctor’s orders, for real), a garlic spread from local farmer’s market, fresh sliced mushrooms, marinated mushrooms with some of the “juice” from the jar, topped with some breadcrumbs. Baked at 400 or so for like 40 minutes. So easy, really tasty!

Marmalade Ginger Chicken
4 chicken breasts or chicken parts
4 tbsp orange marmalade or other marmalade or apricot jelly or whatever
4 tablespoons orange juice
1 teaspoon ground ginger (can be omitted if you don’t have it)
2 Tsp Worcestershire sauce
! TSP Dijon Mustard (or any other mustard)
1 clove garlic minced

Put chicken parts in greased baking dish
Combine all other ingredients in a small bowl,
spread ingredients over chicken evenly
bake at 350 for 45 minutes uncovered basting occasionally.

FOOLPROOF. USE another kind of jelly if you don’t have marmalade but it does work better with the sweeter bitter taste of citrus and marmalade.

This is a snap to make.
