And what’s with that damn olive branch in its beak?

I’m not sure about the olive branch and leaves, but the dove is used to represent peace and love because in an ancient Greek myth, Aphrodite, the goddess of love, kept one as a pet.

I believe that’s a biblical reference to the story of Noah’s ark and the great flood; the olive branch that the dove brought back to the ark was evidence that there was dry land and that (essentially) God’s wrath had ended.

DrasticDreamer is right about it being due to Greek myth same thing for the olive branch.

I don’t know for sure, but aren’t doves pretty much just white pigeons? I see pigeons everyday. Nothing too peaceful about them.
