What is a good dam and release agent for pouring epoxy or poly?

Clear epoxy or poly that is usually seen over a wooden bar counter.

Do you want to have the epoxy stop at the edge, or go over it?

Okay, I thought you were, but I didn’t (still don’t) get the dam.
Anyway, is this of help (the technique to make it flow well over and on the edge/face)?
