What to do with a lot of feta cheese?

Someone has given me over 6 pounds of feta cheese but I’m not quite sure what to do with it all. I’ve read tons of salad uses but I’m not really a big salad eater. Anyone have some good ideas?

Feta cheese and cous cous stuffed peppers (roasted) is good. Feta cheese is good on a roast vegetable pizza. Goes well with olives and a bit of lemon and herb dressing. Baked flat mushroom stuffed with feta and cherry tomatoes.

Chicken stuffed with spinach and feta and possibly wrapped in bacon is my favourite recipe with Feta and I definitely recommend it :)

You could make a moussaka dish and top it with some of the feta, or make spanakopitas, which is feta and spinach in a filo pastry.

I love feta on salads and in omelettes or just plain crambled eggs.

One of my very favorite dishes is sauteed veggies topped with feta cheese and a splash of balsamic vinegar.

Drop a bit of EVOO in a pan and saute some swiss chard, drop in a few pecans at the end to give a bit of texture. Plate and top with a handful of feta cheese and a splash of balsamic vinegar.

Or

Sautee some green beans along with a few onions for flavor.When done (you guessed it), plate ant dop with a handful of feta cheese and a splash of balsamic vinegar.

Same basic concept for pretty much any veggie medley…

Six pounds of any cheese seems like a lot for a household, unless you are the Duggars (19 Kids and Counting). I’d go with @JilltheTooth ‘s suggestion and freeze some of it.

I agree with the above posts that feta makes an excellent stuffing in a number of dishes. I would look into that. You can also turn it into a dressing or sauce by blending it with oil, vinegar and seasonings of your choice.

I’ve read that cutting it and putting it in water for 30min removes much of the salt; would this be ok for spanokopita?

If you freeze it, package it in separate manageable chunks, enough for a meal or a few days.

Get some pitas and make sandwiches, like seasoned grilled chicken, beef, lamb or pork with whatever veggies you like and some sort of dressing.

Melt a panful and dip things in it for fondue.

Crumble on top of soups.

Next time you make something with cheese, substitute ⅓ to ½ of whatever cheese you were going to use with Feta to give your dish a unique flavor.

Have a party and serve it to friends.

Cut feta into cubes, arrange attractively in jar with sprigs of fresh rosemary, cloves of peeled garlic, peppercorns, whole fresh chilli and/or anything else that takes your fancy. Cover entirely with a good extra virgin olive oil and store until cheese has absorbed sufficient flavour to satisfy one’s palate. I’ve only ever stored on a shelf but you may prefer to refrigerate….

Naan bread – pan-fried with a little bit of butter until lightly browned.

Place the following on the bread:
Tomatoes – sauteed until soft.
Uncooked, sliced mushrooms.
Olives.
Lettuce.
Cesar dressing.
Feta cheese sprinkled over the top.

This is one of my favorite foods to make, and I will never, ever turn it down.

being greek, i sure love feta… :) you can make greek pasta salad, serve it as an appetizer: sliced feta, kalamata olives and tomatoes topped with olive oil and oregano, and although it may sound weird, feta cheese with watermelon is super-delicious too. Also, pizza or egg omelets with spinach, tomatoes and feta are the bomb!!!

Here are 2 of my favorite ways to eat feta cheese. The first is to make a dip out of it, which I call Fire Feta. Put about about 2 cups of feta in a bowl and mix in about a cup of adjvar (a condiment made with roasted red bell peppers and eggplants that can be found in the middle eastern section of the grocery store, or at Trader Joe’s) and add about a half a teaspoon of cayenne pepper. Mix well. It will be a pretty bright orange/red color. Eat with tortilla chips or spread it on pita bread.

My second favorite thing to do with feta cheese is to put some on a warm flour tortilla and add a few dollops of marmalade (orange, tangerine, grapefruit or whatever kind you like best) some chopped hazlenuts and a few sprigs of mint, then roll it up and eat it. This is really good for breakfast. Bon Apetite!
