I like @Mamradpivo‘s suggestion of Uva (it means “grapes” in Italian). There are two Italian words for wine bar: enoteca and vineria; maybe one of those plus an adjective or name?

What kind of a feel are you going for? Sophisticated? Casual? What’s the decor like? Will you serve food? Any particular kind of wine you’ll be focusing on? I’m asking because it might help us give you more suggestions.
