Do you have any great recipes for a pellet fuel smoker/grill?

I just got a Brinkmann pellet smoker last weekend and I’m going smoker-crazy!

I’ve perfected salmon, did okay with baby-back-ribs (I need to fine tune that recipe) and am now trying a brisket for the first time.

I also got a Bountiful Basket containing sweet peppers, mushrooms, asparagus and zucchini that I’m eager to experiment with and I’ve heard about smoking hard-boiled eggs and cheeses… it seems anything could be improved with smoke!

Do any of you have tried-and-true recipes and/or techniques to assist a newbie? Do you prefer different varieties of pellet flavors over others for different foods?

I’m a lump charcoal cooker. My advice for meat is to try different rubs and practice. Cheese require a very cold smoke, less than 100* F.

As you probably know, I’m a vegetarian so I didn’t taste this, but last Thanksgiving my cousin made a smoked, stuffed pork loin that smelled divine and got rave reviews from the relatives.

Here’s a recipe that sounds pretty tasty and will make use of the mushrooms you got Smoked Pork Loin stuffed with Garlic, Mushroom and Apple Cranberry

This one also sounds good Smoked Pork Tenderloin with Cherries, Garlic and Rosemary

I always drool when I watch Down Home with the Neely’s on the Food Network. Here is one of the Neely’s recipes for Smoked Game Hens. They use their own dry rub, which is listed and the yummy addition of orange juice and apple cider vinegar.

My co-worker went out fishing a few months ago and caught a huge tuna. He prepared it in many ways because he had so much. You might like this recipe for Smoked Tuna Steaks

I did know @Kardamom would research for me… when I mentioned food. I love you kardamommy I’m checking those out and thank you!

@ragingloli That looks good for a tenderloin and the video is helpful… now I just need a few extreme sportsmen to enhance my experience.

How about smoked squirrel, venison, elk, or rabbit? Oh and smoked grouse or pheasant would be really good.
