Are yellow beets and red beets equally nutritious?

Just wondering if they have different nutritional content, and if one type is better for you than the other.

I can find no nutritional difference. Some people say the yellow ones taste a little sweeter, but most just comment about which one looks better in their salads.

As a general rule of thumb, the lighter the beet the higher the sugar content. The beets they grow around here for sugar are almost white, and I think they taste nasty too.

Just treat them like jewelry; do they compliment your outfit?

I believe different colors provide different photochemicals and a variety of colors offers the best nutrient value.

They’re close enough in nutritional value, that it doesn’t really matter. Lighter colored ones do tend to be a little sweeter, but it’s subtle.

Good varieties are: Ruby Red, Chioggia, or Golden.
