What are some good cajun chicken sandwich recipes?

Alternative. This is a KILLER sandwich recipe I stole from a cafe I once worked in. It was our most popular lunch order.

Mix diced, baked or canned shredded chicken breast with a tablespoon of mayo and equal amount of Caesar dressing.
Add minced celery, slivered almonds and diced red grapes.
Fill pita pocket bread with mixture and garnish with Romaine lettuce. Soooo good!

Haha…” K” is the queen of creative recipes, we should all bow to the mistress of culinary delights. ;-)
