Will there be Salmonella and Staph. aureus found in my plate counts from raw, refrigerated pork after incubation? Which bacteria am I expected to see in this type of meat? Thanks.

Will there be Salmonella and Staph. aureus found in my plate counts from raw, refrigerated pork after incubation? Which bacteria am I expected to see in this type of meat?

You are most likely to find Yersinia enterocolitica. And e. Coli.

And I would be much more concerned about worms and other parasitic delights in raw pork.
