What can I add to my sauteing stuffing mix to give it some sweetness?

I’m sauteing onions, portabella mushrooms, celery, raisins and pecans. I know the pecans will be great, but it seems like they add a touch of bitterness that I’d like to balance out. What food could I add for that?

I do dried cranberries and some orange juice.

Oh! Orange juice! I never thought of that. I wonder if adding mandarin oranges would do the trick?

I often put some white wine like a Riesling in it to add some sweetness.

Apples, pears, or even cherries (fresh ones, not the maraschino or candied kind).

Before you put your raisins in the dressing, bring them to a boil in a little water and butter (almost cover them). Turn off the burner and let them sit in the liquid for about 20 minutes, then pour the raisins and liquids in the stuffing.

The question was asked regarding how to add a little more sweetness. The raisins have that sweetness, but I find that it is not released if they are just put in the dressing. Bringing them to a boil in the bit of water and butter breaks down the raisins’ casings and draws their sweetness out, spreading it. You are going to eat those raisins anyway, I think that using what’s already there to the fullest, without adding any more sugar & calories, is a good choice. <smile>

I didn’t know that about the raisins, though. Thanks. I will sure try that next time.
Not worried about calories for once in my life. There is a bunch of turkey fat and butter in there, so extra sugar calories would hardly make a dent in the dish. Plus Rick is going to made mashed potatoes and gravy to pour over it all. I ate almost nothing yesterday in anticipation of today AND I’M STARVING!!!

Also, I made my bread a little sweeter than I normally do. Turned out to be a good thing. From now on I’ll be sure to make it that way for stuffing.
I AM HUNGRY!!!
